Cooking, Eating, and Enjoying Healthy Food!

Day 1 just happens to be a Sunday, so it’s actually a rest day. I’ll highlight my food choices for today, along with any exercise I just happen to do. Tonight, my husband’s boss and his wife are coming to dinner, so I’m going all out with some fall comfort foods. The menu is in no way diet food, but it’s mostly homemade, and I’ll watch my portions. I try and use organic produce and grass-fed or pastured meat when I can. Just one reason why my husband has a minor coronary whenever he sees our grocery bill. 🙂
Breakfast: 2 slices of Ezekiel Cinnamon Raisin toast + sunbutter + mashed banana and cinnamon on top, side of blueberries and
blackberries, low-fat latte
Snack: small granny smith apple + 1.5 slices of Jarlsberg lite swiss cheese
Lunch: 2 cups of Imagine brand Chicken Noodle soup + some organic wheat thin type crackers (I top my soup off with a good squeeze of fresh lemon juice)
Snack: 2 pieces of applegate farms pork breakfast sausage
Dinner: Paleo pot roast (recipe here), my mom’s mashed potatoes, green beans with bacon and onions (recipe here), salad (arugula, cherry tomatoes, goat cheese, pumpkin seeds, and homemade blueberry vinaigrette), and MAYBE a mini lemon tart (from Whole Foods)
